THE INGREDIENTS
- 16 large shrimp
- 1 cup bell peppers
- 2 cups turkey sausage (or beef but turkey is more figure friendly)
- 1 onion (chopped)
- 2-3 cloves of garlic (minced)
- 12 small potatoes (any kind..I like using sweet potatoes)
- corn or peas as much or as little to your liking
- 6 plum tomatoes
- 8 bunches of Kale (or spinach) stems removed
- 2 tsp. old bay
- 2 Quarts water
- 2 tablespoons grapeseed oil.
- black pepper to taste
- Mushrooms
DIRECTIONS
- 1. Place large pot on stove and heat to medium high heat add grape seed oil.
- 2. Add Shrimp and cool on each side for 1 to two minute, depending on size
- 3. Remove shrimp and add onion, garlic, peppers, mushrooms Lower heat and saute for 3-5 min. Add sausage and cook for three TO five min
- 4. add water, Potatoes and tomatoes and bring to boil. Lower heat and simmer 10-15 min until potatoes are tender
- 5. Add Kale and Corn
- 6. Season and serve
